  • 6 medium tomatillos, halved
  • 1/2 medium onion, cut into smaller pieces
  • 2 cloves garlic
  • Handful of fresh cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and position the rack at the top for optimal roasting.
  2. Roast Tomatillos: Place the halved tomatillos cut side down on a non-stick baking sheet. Bake for about 40 minutes or until the tomatillos are soft and slightly blackened to bring out their natural sweetness and smokiness.
  3. Prepare Other Ingredients: While the tomatillos roast, add the onion pieces, garlic cloves, cilantro, lime juice, and jalapeno to a food processor. Season with salt and black pepper according to taste.
  4. Cool Tomatillos: Remove the roasted tomatillos from the oven and let them cool for about five minutes to avoid cooking the other ingredients when blended.
  5. Blend the Salsa: Add the cooled tomatillos to the food processor with the other ingredients. Blend on high speed until the mixture is smooth. Pause to scrape down the sides if necessary to ensure an even texture.
  6. Serve or Chill: Serve the salsa verde immediately for the freshest taste, or refrigerate it to chill for about an hour to meld the flavors further before serving.

  • Removing jalapeno seeds will reduce the heat; leave them in for more spice.
