For the Chili:
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 ½ pounds ground turkey or beef
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can diced tomatoes
- 1 cup tomato sauce
- 2 medium sweet potatoes, peeled and diced
For Topping:
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (optional for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until softened. Stir in garlic, then add bell peppers and cook. Add ground turkey or beef and cook until browned. Stir in spices, beans, tomatoes, tomato sauce, and sweet potatoes. Simmer for 10 minutes.
- Transfer the mixture into a greased 9×13-inch baking dish. Cover with foil and bake for 30 minutes. Remove foil, top with cheddar cheese, and bake uncovered for 10–15 minutes until cheese is melted and bubbly. Cool slightly before serving. Garnish with green onions if desired.
Notes
- For a vegetarian version, omit the meat and add an extra can of beans or a cup of cooked lentils.
- This casserole is great for meal prep and freezes well.
