- 2 medium zucchini (spiralized on the medium setting)

Instructions
- Spiralize Zucchini: Spiralize the two medium zucchini on the medium setting to create zucchini noodles (zoodles). Set aside.
- Cook Shrimp: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp and cook for about 2 minutes, stirring frequently until they start turning pink and opaque.
- Add Flavorings: Add the minced garlic, 6 tablespoons of Thai sweet chili sauce, juice of half a lime, and chopped cilantro to the skillet. Continue cooking for approximately 3 more minutes, stirring occasionally, until the shrimp are fully cooked and the sauce has slightly thickened.
- Toss Zoodles: Add the spiralized zucchini noodles to the skillet. Toss and stir continuously for 1 to 2 minutes using tongs, just until the zoodles are slightly cooked and warmed through; be careful not to overcook so they stay crisp.
