Instructions

  1. In a large bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Add graham cracker crumbs and crushed freeze-dried strawberries, stirring until fully combined.
  3. Chill the mixture in the refrigerator for 30 minutes to firm up.
  4. Once chilled, scoop and roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  5. Freeze the balls for 15-20 minutes.
  6. While the balls are chilling, melt the white chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second increments, stirring between each until smooth.
