Description

Egg Mixture

  • 4 large eggs
  • 2 tablespoons milk

Vegetables & Cheese

  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced tomatoes (optional)
  • 2 tablespoons red onion, finely chopped (optional)

Wrap

  • 2 large whole wheat tortillas (8-inch)
  • 1 teaspoon olive oil


Instructions

  1. Prepare egg mixture: In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  2. Sauté spinach: Heat the olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1 to 2 minutes until wilted.
  3. Scramble eggs: Pour in the egg mixture over the wilted spinach and cook, stirring gently, until the eggs are scrambled and just set.
  4. Add feta: Remove the pan from heat and stir in the crumbled feta cheese to combine.
  5. Warm tortillas: Warm the whole wheat tortillas either in a dry skillet or microwave for 10 to 15 seconds until pliable.
