- 4 large eggs

Vegetables & Cheese
- 1 cup fresh spinach, roughly chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup diced tomatoes (optional)
- 2 tablespoons red onion, finely chopped (optional)
Wrap
- 2 large whole wheat tortillas (8-inch)
- 1 teaspoon olive oil
Instructions
- Prepare egg mixture: In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Sauté spinach: Heat the olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1 to 2 minutes until wilted.
- Scramble eggs: Pour in the egg mixture over the wilted spinach and cook, stirring gently, until the eggs are scrambled and just set.
- Add feta: Remove the pan from heat and stir in the crumbled feta cheese to combine.
- Warm tortillas: Warm the whole wheat tortillas either in a dry skillet or microwave for 10 to 15 seconds until pliable.
- Assemble wrap: Divide the egg and spinach mixture evenly between the tortillas. Top with diced tomatoes and red onion if using.
- Roll wrap: Fold in the sides of the tortilla and roll it up tightly to form a wrap.
