Ingredients

Scale

For the meatballs:

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 small onion, finely chopped
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp chili powder
  • 1/2 tsp salt

For the curry sauce:

  • 2 tbsp oil (for frying)
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup chicken broth
  • juice of 1/2 lime
  • salt to taste
  • chopped fresh cilantro (for garnish)

Instructions

  1. Prepare the meatballs: In a large bowl, combine ground chicken, garlic, ginger, onion, breadcrumbs, egg, cilantro, cumin, coriander, chili powder, and salt. Form into small meatballs.
  2. Cook the meatballs: Brown the meatballs in a skillet, then set aside.
  3. Make the curry sauce: In the same skillet, sauté curry powder, turmeric, and paprika. Add coconut milk and chicken broth. Simmer, then return meatballs to the skillet and cook until done.
  4. Finish and serve: Stir in lime juice, adjust seasoning, and garnish with cilantro. Serve over rice or with naan.

Notes

  • Serve over steamed rice, jasmine rice, or with naan bread.
  • For extra heat, add a pinch of cayenne to the curry sauce.
  • Ground turkey can be substituted for ground chicken.
