For the meatballs:
- 1 lb ground chicken
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 small onion, finely chopped
- 1/4 cup breadcrumbs
- 1 egg
- 1/4 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp chili powder
- 1/2 tsp salt
For the curry sauce:
- 2 tbsp oil (for frying)
- 1 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp paprika
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup chicken broth
- juice of 1/2 lime
- salt to taste
- chopped fresh cilantro (for garnish)
Instructions
- Prepare the meatballs: In a large bowl, combine ground chicken, garlic, ginger, onion, breadcrumbs, egg, cilantro, cumin, coriander, chili powder, and salt. Form into small meatballs.
- Cook the meatballs: Brown the meatballs in a skillet, then set aside.
- Make the curry sauce: In the same skillet, sauté curry powder, turmeric, and paprika. Add coconut milk and chicken broth. Simmer, then return meatballs to the skillet and cook until done.
- Finish and serve: Stir in lime juice, adjust seasoning, and garnish with cilantro. Serve over rice or with naan.
Notes
- Serve over steamed rice, jasmine rice, or with naan bread.
- For extra heat, add a pinch of cayenne to the curry sauce.
- Ground turkey can be substituted for ground chicken.
