Biscuit Topping
- 2 1/4 cups baking mix (such as Bisquick)
- 1/2 cup granulated sugar
- 4 tablespoons butter (melted)
- 2/3 cup milk (or buttermilk)
- 2 tablespoons granulated sugar
- 1/4 teaspoon cinnamon
Instructions
- Prep: Spray the inside of a 6-quart slow cooker with non-stick cooking spray. Gather and prepare all the ingredients.
- Assemble berry filling: In the slow cooker, gently toss the mixed berries with 1/2 cup granulated sugar, vanilla extract, and 1/2 cup baking mix until evenly combined.
- Make biscuit topping: In a mixing bowl, stir together the remaining 2 1/4 cups baking mix, 1/2 cup sugar, melted butter, and milk until a soft, pliable dough forms. It should be soft but not too sticky to handle.
- Add topping to filling: Drop the biscuit dough in roughly 2-tablespoon-sized dollops over the berry filling, leaving some gaps to allow steam to escape during cooking.
- Finish with cinnamon sugar: Mix the remaining 2 tablespoons sugar with the cinnamon in a small bowl, then sprinkle evenly over the biscuit topping without stirring.
- Slow cook: Cover the slow cooker and cook on the HIGH setting for about 3 hours, or until the biscuit topping is puffed up and cooked through and the fruit is bubbly. Check after 2.5 hours to avoid overcooking. Serve the cobbler warm.
