Description

This Slow Cooker Berry Cobbler is a delightful and easy-to-make dessert featuring a medley of mixed berries topped with tender, fluffy biscuit dollops. Prepared in a slow cooker, this cobbler combines sweet, juicy berries with a buttery, cinnamon-sugar biscuit topping, perfect for serving warm and enjoying comfort flavors with minimal hands-on time.

Ingredients

Scale

Berry Filling

  • 8 cups mixed berries (such as raspberries, blueberries, blackberries, or strawberries; frozen is fine, partially thaw before using)
  • 1/2 cup granulated sugar (adjust according to sweetness of berries)
  • 1 teaspoon vanilla extract
  • 1/2 cup baking mix (such as Bisquick)

Biscuit Topping

  • 2 1/4 cups baking mix (such as Bisquick)
  • 1/2 cup granulated sugar
  • 4 tablespoons butter (melted)
  • 2/3 cup milk (or buttermilk)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon cinnamon

Instructions

  1. Prep: Spray the inside of a 6-quart slow cooker with non-stick cooking spray. Gather and prepare all the ingredients.
  2. Assemble berry filling: In the slow cooker, gently toss the mixed berries with 1/2 cup granulated sugar, vanilla extract, and 1/2 cup baking mix until evenly combined.
  3. Make biscuit topping: In a mixing bowl, stir together the remaining 2 1/4 cups baking mix, 1/2 cup sugar, melted butter, and milk until a soft, pliable dough forms. It should be soft but not too sticky to handle.
  4. Add topping to filling: Drop the biscuit dough in roughly 2-tablespoon-sized dollops over the berry filling, leaving some gaps to allow steam to escape during cooking.
  5. Finish with cinnamon sugar: Mix the remaining 2 tablespoons sugar with the cinnamon in a small bowl, then sprinkle evenly over the biscuit topping without stirring.
  6. Slow cook: Cover the slow cooker and cook on the HIGH setting for about 3 hours, or until the biscuit topping is puffed up and cooked through and the fruit is bubbly. Check after 2.5 hours to avoid overcooking. Serve the cobbler warm.

Notes

  • Partially thaw frozen berries if using to prevent excess water in the cobbler.
  • You can adjust the sugar amount based on the sweetness of the fruit.
  • Leave dough dollops spaced out to let steam escape and avoid soggy topping.
  • Check biscuits for doneness especially in the center, as they may take longer to cook.
  • Serve warm with ice cream or whipped cream for extra indulgence.
