Description

This skillet lasagna recipe offers a quick and easy way to enjoy classic lasagna flavors without the hassle of layering and baking. Ground beef simmers with tomatoes and broth, combined with broken lasagna noodles cooked right in the pan, then finished with a creamy, cheesy blend for a comforting and satisfying dish perfect for weeknight dinners.

Ingredients

Scale

Meat and Seasonings

  • 1 lb ground beef
  • 1 teaspoon onion powder
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon salt

Liquids and Dairy

  • 1 can (28 ounces) diced tomatoes
  • 2 ½ cups beef broth
  • ¼ cup cream cheese, softened
  • ¼ cup heavy cream
  • â…“ cup grated parmesan cheese
  • 8 ounces mozzarella cheese, divided (4 ounces cubed, 4 ounces sliced)

Pasta

  • 10 uncooked lasagna noodles, broken into pieces (Barilla recommended)

Instructions

  1. Cook the Ground Beef: Heat a large pan over medium-high heat. Add the ground beef and cook until no longer pink, breaking it up with a spoon to crumble the meat evenly.
  2. Season the Meat: Add onion powder, dried oregano, and salt to the beef. Stir to distribute the seasonings evenly throughout the meat.
  3. Add Tomatoes and Broth: Pour in the diced tomatoes with their juice and the beef broth. Bring the mixture to a boil to combine flavors and prepare for the noodles.
  4. Add Lasagna Noodles: Break the uncooked lasagna noodles into pieces and add them directly into the boiling mixture in the pan.
  5. Simmer the Noodles: Stir well to make sure all noodles are coated with liquid. Cover the pan with a lid and reduce heat to medium-low. Cook the noodles for 15-20 minutes, stirring every 5 minutes to prevent sticking and ensure even cooking. Do not skip stirring.
  6. Mix in Cheeses and Cream: Once the noodles are cooked al dente, stir in the cubed mozzarella cheese, grated parmesan, heavy cream, and softened cream cheese. Mix everything well to create a creamy, cheesy sauce.
  7. Top and Melt Mozzarella: Arrange the sliced mozzarella cheese on top of the skillet lasagna. Cover the pan and cook over medium-high heat for 1-2 minutes until the mozzarella slices melt.
  8. Rest the Dish: Remove the pan from heat and let the lasagna rest for 5-10 minutes. This resting time helps it to set and makes it easier to serve.
  9. Serve: Serve the skillet lasagna hot, garnished with chopped basil and additional parmesan cheese if desired.

Notes

  • Stirring every 5 minutes during noodle cooking is crucial to prevent the noodles from sticking and to ensure even cooking.
  • You can customize this recipe by adding vegetables like spinach or mushrooms for extra nutrition.
  • If you prefer, substitute ground turkey or chicken in place of ground beef.
  • The resting step is important for the lasagna to firm up before serving.
