- 2 tablespoons chopped fresh cilantro

Instructions
- Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Cook chicken for 6-8 minutes until browned and cooked through.
- Make the Sauce: Reduce heat to medium. Stir in queso, chicken broth, and diced tomatoes. Simmer for 3-4 minutes until heated through and slightly thickened.
- Finish the Dish: Sprinkle shredded cheese over the chicken. Cover and let cheese melt for 2-3 minutes. Garnish with cilantro and serve over rice or with tortillas.
