Ingredients

Scale

Protein

  • 8 oz (225g) shrimp, peeled and deveined

Noodles

  • 6 oz (170g) noodles (such as rice noodles or egg noodles)

Vegetables

  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 tsp fresh ginger, grated
  • 1 green onion, chopped for garnish

Sauces and Oils

  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar

Seasonings and Garnish

  • Salt and pepper to taste
  • 1 tsp sesame seeds for garnish
  • Lime wedges for serving

Instructions

  1. Cook the noodles: Prepare the noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
  2. Cook the shrimp: In a large pan or wok, heat 1 tablespoon of vegetable oil and the sesame oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  3. Sauté aromatics: In the same pan, add the remaining 1 tablespoon of vegetable oil. Add garlic, grated ginger, and sliced onion. Stir fry for about 1 minute until fragrant.
  4. Cook vegetables: Add broccoli florets, sliced red bell pepper, and julienned carrot to the pan. Stir fry for 3-4 minutes until vegetables are tender-crisp.
  5. Combine shrimp and noodles: Return the cooked shrimp to the pan and add the drained noodles. Toss everything together to combine well.
  6. Add sauce: In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, and rice vinegar. Pour this sauce over the noodle mixture and toss until everything is evenly coated.
  7. Season and meld flavors: Season the stir fry with salt and pepper to taste. Continue cooking for another 2 minutes, allowing the flavors to blend.
  8. Garnish: Remove from heat and garnish with chopped green onions and sesame seeds.
  9. Serve: Serve immediately with lime wedges on the side for squeezing over the dish.

Notes

  • You can substitute chicken or tofu for shrimp for a different protein option.
  • Adjust vegetable quantities and types based on preference or seasonal availability.
  • Rice noodles create a lighter dish, while egg noodles add a richer texture.
  • For a spicier dish, add red pepper flakes or a dash of chili sauce when adding the sauce mixture.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
