- 1 tbsp rice vinegar
Seasonings and Garnish
- Salt and pepper to taste
- 1 tsp sesame seeds for garnish

Instructions
- Cook the noodles: Prepare the noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
- Cook the shrimp: In a large pan or wok, heat 1 tablespoon of vegetable oil and the sesame oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- Sauté aromatics: In the same pan, add the remaining 1 tablespoon of vegetable oil. Add garlic, grated ginger, and sliced onion. Stir fry for about 1 minute until fragrant.
- Cook vegetables: Add broccoli florets, sliced red bell pepper, and julienned carrot to the pan. Stir fry for 3-4 minutes until vegetables are tender-crisp.
- Combine shrimp and noodles: Return the cooked shrimp to the pan and add the drained noodles. Toss everything together to combine well.
- Add sauce: In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, and rice vinegar. Pour this sauce over the noodle mixture and toss until everything is evenly coated.
- Season and meld flavors: Season the stir fry with salt and pepper to taste. Continue cooking for another 2 minutes, allowing the flavors to blend.
- Garnish: Remove from heat and garnish with chopped green onions and sesame seeds.
- Serve: Serve immediately with lime wedges on the side for squeezing over the dish.
Notes
- You can substitute chicken or tofu for shrimp for a different protein option.
- Adjust vegetable quantities and types based on preference or seasonal availability.
- Rice noodles create a lighter dish, while egg noodles add a richer texture.
- For a spicier dish, add red pepper flakes or a dash of chili sauce when adding the sauce mixture.
- Make sure not to overcook the shrimp to keep them tender and juicy.
