- 1 tablespoon breadcrumbs

Egg Wash:
- 1 egg, beaten

Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Sausage Mixture: In a mixing bowl, combine ground sausage, chopped onion, minced garlic, thyme, mustard, breadcrumbs, salt, and pepper. Mix well.
- Roll Out the Pastry: On a floured surface, roll out the puff pastry into a 10×12 inch rectangle. Cut in half lengthwise to make two strips.
- Assemble the Rolls: Shape the sausage mixture into two long logs. Place each log on a pastry strip. Brush edges with egg wash, fold pastry over filling, and seal. Cut into pieces.
- Bake: Place the rolls on the baking sheet, brush with egg wash, and bake for 25–30 minutes until golden and cooked through.
