Ingredients
Scale
For the Salmon
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lime juice
For the Mango Salsa
- 1 large mango, diced
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot and ready for the salmon.
- Prepare Salmon on Baking Sheet: Place the salmon fillets on a baking sheet lined with parchment paper or aluminum foil for easy cleanup.
- Apply Olive Oil: Drizzle the olive oil evenly over each salmon fillet to keep the fish moist during baking.
- Season Salmon: Sprinkle salt and black pepper evenly over the fillets to season them.
- Rub Seasonings In: Using a spoon or your fingers, gently rub the olive oil, salt, and pepper into the salmon to ensure even flavor.
- Add Lime Juice: Squeeze 1 tablespoon of fresh lime juice over the salmon fillets for a fresh citrus flavor.
- Bake Salmon: Place the salmon in the preheated oven and bake for 12-15 minutes or until the fish flakes easily with a fork and is cooked through.
- Prepare Mango Salsa: While the salmon bakes, peel and dice the mango into small cubes, discard the pit, and place in a mixing bowl.
- Add Vegetables and Herbs: Finely chop the red onion, dice the red bell pepper and chop fresh cilantro; add all to the bowl with the mango.
- Add Jalapeño: Seed and finely chop the jalapeño, then add it to the salsa mixture for a mild heat.
- Season Salsa: Add 1 tablespoon of fresh lime juice and 1/2 teaspoon of salt to the salsa ingredients and stir well to combine all flavors.
- Serve: Remove the salmon from the oven once cooked. Serve the hot salmon fillets topped generously with the fresh mango salsa.
Notes
- Make sure to check the salmon for doneness by seeing if it flakes easily with a fork.
- You can adjust the amount of jalapeño based on your preferred spice level.
- Use fresh lime juice for the best flavor in both the salmon and salsa.
- For a crispier skin, you may choose to broil the salmon for the last 1-2 minutes of cooking.
