Ingredients
Scale
Salmon and Marinade
- 10 ounces sushi-grade salmon
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon mirin
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon sesame oil
- 1 tablespoon rice vinegar
- White parts of 2 scallions, thinly sliced
Rice
- 1/2 cup white rice
- Water, as needed for cooking
Fresh Toppings
- 1 English cucumber, thinly sliced
- 2 radishes, thinly sliced
- 1 avocado, thinly sliced
- 1/4 cup mango, diced
Instructions
- Prepare the marinade: In a large mixing bowl, combine the minced garlic, grated ginger, mirin, soy sauce, lemon juice, sesame oil, rice vinegar, and the white parts of the scallions. Stir well to blend all the flavors.
- Marinate the salmon: Cut the sushi-grade salmon into 1-inch cubes and gently add them to the marinade. Toss carefully to coat each piece and let it marinate in the refrigerator for 15 to 45 minutes to absorb the flavors.
- Cook the rice: Rinse the white rice under cold water until the water runs clear. Cook the rice according to the package instructions, usually by boiling in water until tender and fluffy. Set aside to cool slightly.
- Assemble the poke bowls: In serving bowls, start by placing a layer of cooked white rice. Top the rice with the marinated salmon cubes, then arrange the thinly sliced cucumber, radishes, avocado, and diced mango over the top for a visually appealing and tasty presentation.
Notes
- Use only sushi-grade salmon to ensure freshness and safety when serving raw fish.
- Marinate the salmon between 15 to 45 minutes; longer marination can soften the texture too much.
- For a healthier option, substitute white rice with brown rice or cauliflower rice.
- Add toasted sesame seeds or sliced nori strips on top for extra flavor and texture.
- Keep all ingredients chilled before assembling to maintain freshness and safety.
