Salmon Foil Pack:

  • 4 salmon fillets (about 6 oz each)
  • 1 bunch of asparagus (trimmed)
  • 2 tablespoons olive oil
  • 1 lemon (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh dill (chopped)
  • Salt and black pepper to taste
  • Optional: 1 tablespoon butter per packet for extra richness


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare foil packets: Cut 4 large sheets of aluminum foil. Place a salmon fillet in the center of each foil sheet. Divide the asparagus evenly and arrange next to each fillet.
  3. Season and assemble: Drizzle olive oil over the salmon and asparagus. Sprinkle with salt, black pepper, garlic, thyme, and dill. Top each fillet with lemon slices and a pat of butter if desired.
  4. Wrap and bake: Fold the foil over the salmon and asparagus to seal into packets. Bake for 18–20 minutes until salmon is cooked through and asparagus is tender.
