Instructions
- Heat olive oil: Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic: Add the diced onion and sauté until softened, then stir in the garlic.
- Cook mushrooms: Add mushrooms, thyme, rosemary, pepper, and salt. Cook until mushrooms release their moisture.
- Add broth and chicken: Pour in chicken broth and water, then add the rotisserie chicken. Simmer to meld flavors.
- Finish the soup: Reduce heat, stir in cream and soy sauce. Heat through without boiling. Adjust seasoning and serve hot, garnished with parsley.
