Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables.
- Prepare Vegetables: In a large bowl, combine the diced zucchini, red and yellow bell peppers, red onion, and halved cherry tomatoes.
- Season Vegetables: Drizzle the olive oil over the vegetables. Sprinkle garlic powder, dried oregano, dried thyme, salt, and pepper evenly, then toss everything together to coat the vegetables well.
- Roast Vegetables: Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through until the vegetables are tender and nicely golden.
- Cook Couscous: While the vegetables roast, bring the vegetable broth to a boil in a saucepan. Stir in the couscous, cover the pan, remove it from the heat, and let it sit undisturbed for 5 minutes to absorb the broth. Fluff with a fork afterward.
- Combine: Gently fold the roasted vegetables into the fluffed couscous to combine evenly.
- Garnish and Serve: Garnish with freshly chopped parsley and serve the dish with lemon wedges for squeezing over the top.
