- 1 cup mayonnaise (Duke’s preferred)
- 1 (4 oz) jar chopped pimentos, drained

Instructions
- Prepare Egg Yolks: Scoop out yolks from hard-boiled, peeled, and halved eggs and place them into a mixing bowl, ensuring no whites are mixed in.

- Fill Egg Whites: Spoon or pipe the pimento cheese filling back into the hollowed egg white halves until nicely filled.
- Garnish: Sprinkle the filled eggs lightly with smoked paprika for a touch of color and added flavor.
- Chill: Refrigerate the eggs for at least 30 minutes before serving to allow flavors to meld and enhance taste.
Notes
- Use Duke’s mayonnaise for authentic flavor and creaminess.
- Chilling the eggs enhances the flavor and helps the filling set.
- For a smoother filling, use a food processor to blend ingredients quickly.
- These deviled eggs can be prepared a few hours ahead and stored covered in the refrigerator.
