Instructions

  1. Prepare Egg Yolks: Scoop out yolks from hard-boiled, peeled, and halved eggs and place them into a mixing bowl, ensuring no whites are mixed in.
  2. Add Ingredients: Add sharp cheddar cheese, black pepper, salt, honey Dijon mustard, garlic powder, mayonnaise, and drained chopped pimentos to the bowl with the yolks.
  3. Mix Filling: Mash and mix all ingredients together thoroughly until smooth and creamy. For an extra smooth texture, pulse the mixture briefly in a food processor.
  4. Fill Egg Whites: Spoon or pipe the pimento cheese filling back into the hollowed egg white halves until nicely filled.
  5. Garnish: Sprinkle the filled eggs lightly with smoked paprika for a touch of color and added flavor.
  6. Chill: Refrigerate the eggs for at least 30 minutes before serving to allow flavors to meld and enhance taste.
