Instructions

  1. Preheat the oven and prepare onions. Preheat your oven to 400 degrees Fahrenheit. Thinly slice the onions using a mandolin set to 1/28th inch thickness or a very sharp knife to ensure even, paper-thin slices.
  2. Create the Parmesan base. Spread the shredded Parmesan cheese evenly in a single layer over a parchment-lined baking sheet to form the crispy chip base.
  3. Arrange onion slices. Lay the thin onion slices over the layer of Parmesan on the baking sheet in a single layer, ensuring they are evenly spaced and not overlapping too much.
  4. Season and oil the onions. Brush the olive oil gently over the onion slices to help with crisping. Then evenly sprinkle sea salt, garlic powder, smoked paprika, and black pepper over the top of the onions for flavor.
  5. Bake until crispy. Place the baking sheet in the oven and bake for 18 to 20 minutes, or until the cheese is melted and crispy and the onions are cooked through and slightly browned.
  6. Cool and slice into chips. Remove the baking sheet from the oven and let the onion ring chips cool for a few minutes so they firm up, then slice into individual chips and serve.
