For the crepes:

  • 2 large eggs
  • 1 1/4 cups whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar

  • 1/2 teaspoon vanilla extract

For the filling:

  • 1/2 cup Nutella
  • 1/2 cup heavy whipping cream
  • 1 tablespoon powdered sugar

Instructions

  1. Prepare the crepe batter: In a medium mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, salt, and vanilla extract until smooth. Let the batter rest for at least 20 minutes.
  2. Cook the crepes: Heat a nonstick skillet over medium heat, pour 1/4 cup of batter, cook for 1–2 minutes until lightly golden, flip and cook for another 30 seconds. Repeat with remaining batter.
  3. Make the filling: Whip cream and powdered sugar until soft peaks form, then fold in Nutella until smooth.
  4. Fill and serve: Spoon or pipe Nutella cream onto each crepe, roll or fold, and serve with optional toppings.

Notes

  • For extra flavor, add a tablespoon of hazelnut liqueur to the filling.
  • You can make the crepes ahead of time and refrigerate them, separated by parchment paper. Warm slightly before filling.
