Description

No-Peek Chicken Casserole is a comforting and easy one-pan dinner that combines tender chicken breasts, creamy soups, and fluffy rice for a delicious meal the whole family will love.

Chicken and Rice:

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)

Sauce:

  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 envelope onion soup mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Additional:

  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil.
  2. Prepare Rice: Spread uncooked rice evenly in the bottom of the dish.
  3. Make Sauce: Whisk together cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, and black pepper. Pour over rice.
  4. Add Chicken: Place chicken breasts on top of the rice mixture.

  6. Bake: Cover tightly with foil and bake for 1 hour and 30 minutes without peeking.
