Chicken and Rice:
- 4 boneless, skinless chicken breasts
- 1 cup long grain white rice (uncooked)
Sauce:
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 1 envelope onion soup mix
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Additional:
- 1 tablespoon olive oil
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil.
- Prepare Rice: Spread uncooked rice evenly in the bottom of the dish.
- Make Sauce: Whisk together cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, and black pepper. Pour over rice.
- Add Chicken: Place chicken breasts on top of the rice mixture.
- Season: Sprinkle dry onion soup mix evenly over the chicken.
- Bake: Cover tightly with foil and bake for 1 hour and 30 minutes without peeking.
- Rest and Garnish: Let casserole rest for 5 minutes after baking. Garnish with parsley before serving.
