Ingredients
Scale
Beans and Greens
- 2 cans (15 oz each) white beans (such as cannellini or Great Northern), drained and rinsed
- 4 cups fresh greens (such as spinach, kale, or Swiss chard), roughly chopped
Seasonings and Garnishes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (optional)
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 1/4 cup crumbled feta cheese (optional, for garnish)
Instructions
- Sauté Garlic and Greens: In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic: Sauté for 1-2 minutes until fragrant but not browned, releasing its full flavor.
- Add the chopped greens: Cook for 3-5 minutes, stirring occasionally, until the greens are wilted and tender, ensuring they don’t overcook or burn.
- Add Beans and Seasonings: Stir in the drained white beans, dried oregano, red pepper flakes if using, and season with salt and pepper to taste.
- Cook Beans: Allow the beans and seasonings to cook together for 3-4 minutes so the dish heats evenly and flavors meld.
- Add Lemon and Finish: Remove the skillet from heat and stir in the lemon zest and juice to brighten the flavors. Adjust seasoning with additional salt, pepper, or lemon juice if needed.
- Serve: Transfer to a serving dish and garnish with fresh parsley and optional crumbled feta cheese.
- Enjoy: Serve warm as a flavorful side dish or a light main course.
Notes
- Choose your preferred greens such as spinach for a milder taste or kale for a heartier dish.
- Red pepper flakes are optional but add a pleasant heat; adjust or omit based on your spice preference.
- Feta cheese adds a savory, salty element but can be omitted for a dairy-free version.
- Leftovers store well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
