Donut Batter
- 2 cups flour
- ¾ cups sugar
- 2 tsp baking powder
- 1 tsp kosher salt
- ¾ cups buttermilk
- 2 large eggs
- 2 tbsp butter (melted)
- 1 tbsp lemon juice (freshly squeezed)
- ½ tsp lemon extract
- 2 tbsp lemon zest
Lemon Sugar Coating
- ½ cup sugar
- 1 tbsp lemon zest
- ½ cup unsalted butter (melted)
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C) and generously spray a 6-cavity donut pan with baking spray to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and kosher salt until evenly combined, ensuring an even rise and texture.
- Add wet ingredients: Whisk in the buttermilk, eggs, melted butter, fresh lemon juice, lemon extract, and lemon zest until the batter is smooth and well incorporated.
- Pipe batter into pan: Transfer the batter into a large piping bag, cut off the tip, and carefully pipe the batter evenly into the donut cavities, filling each about 3/4 full. Bake the donuts for 9 minutes or until a toothpick inserted comes out clean.
- Cool donuts: Remove the donuts from the oven and let them cool in the pan for a few minutes. Then transfer them onto a wire rack to cool completely.
- Prepare lemon sugar: In two small bowls, combine the sugar and lemon zest in one, and place the melted butter in the other bowl.
- Coat donuts: Dip the top of each cooled donut into the melted butter, then immediately dip into the lemon sugar mixture, coating well. Place coated donuts back on the wire rack to set.
- Repeat coating: Continue dipping the remaining donuts in melted butter and lemon sugar until all are coated.
