Scale
Dry Ingredients
- 1 cup (120 g) all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 3/4 cup (180 ml) buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/4 cup (60 ml) pure maple syrup
- 1 teaspoon vanilla extract
Optional Toppings
- Extra maple syrup for dipping
- Powdered sugar for dusting
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and grease a mini muffin tin thoroughly to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt to ensure even distribution of leavening agents.
- Mix Wet Ingredients: In a separate bowl, whisk the buttermilk, large egg, melted unsalted butter, pure maple syrup, and vanilla extract until smooth and well combined.
- Combine Ingredients: Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to maintain the fluffiness of the poppers.
- Fill Muffin Cups: Spoon the batter into the prepared mini muffin tin cups, filling each about three-quarters full to allow room for rising.
- Bake: Place the muffin tin in the preheated oven and bake for 10–12 minutes until the poppers are golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the pancake poppers to cool slightly before removing them from the tin. Serve warm with extra maple syrup for dipping or dusted with powdered sugar for added sweetness.
Notes
- Do not overmix the batter to ensure the poppers stay tender and fluffy.
- Use a toothpick to check doneness; it should come out clean.
- Greasing the mini muffin tin well helps with easy removal.
- These poppers can be reheated in the oven or microwave for a quick breakfast.
- Optional toppings like fresh berries or whipped cream can enhance the flavor.
