  • 1 tbsp coriander (fresh, chopped for garnish)


Instructions

  1. Prepare the Fish: Pat the white fish fillets dry and season both sides with salt and black pepper. Set aside while you prepare the sauce.
  2. Sauté Aromatics: Heat olive oil in a deep skillet or tagine over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant, about 5 minutes.
  3. Add Liquids and Spices: Stir in the diced tomatoes, soaked saffron along with its water, and vegetable broth. Bring the mixture to a gentle simmer.
  4. Cook the Fish: Carefully place the seasoned fish fillets into the simmering sauce. Cover and let cook on low heat for 15-20 minutes until the fish is cooked through and flakes easily with a fork.
  5. Finish and Garnish: Taste the sauce and adjust seasoning if necessary. Sprinkle freshly chopped coriander over the fish before serving to add a fresh, herbal note.
