Description

The egg bites are steam-cooked to perfection in the Instant Pot, delivering fluffy, tender bites with a smooth texture thanks to the blend of eggs, cottage cheese, and heavy cream.

Egg Mixture

  • 4 large eggs (200 grams)
  • 1/2 cup fat free cottage cheese (4 fl oz)
  • 1 tbsp heavy cream (1/2 fl oz)
  • Salt and pepper to taste

Gruyere & Bacon Add-Ins

  • 1/3 cup Gruyere cheese, shredded (30 grams)
  • 5 slices crispy cooked 25% less sodium bacon, finely chopped (33 grams, cooked weight)

Monterey Jack & Veggie Add-Ins

  • 1/2 cup Monterey jack cheese, shredded (40 grams)
  • 1/4 cup roasted red pepper, finely chopped (34 grams)
  • 1/4 cup baby spinach, chopped

Cheddar & Turkey Sausage Add-Ins

  • 1/2 cup Jennie-O turkey sausage, cooked and finely crumbled (58 grams)
  • 1/3 cup cheddar cheese, shredded (30 grams)
  • 1 tbsp chives, chopped


Instructions

  1. Prepare Add-Ins: Choose one of the three flavor combinations—Gruyere & bacon, Monterey jack & roasted red pepper with spinach, or cheddar & turkey sausage with chives. Divide the selected add-ins evenly among the egg bite molds to ensure consistent flavor in each bite.
  2. Blend Egg Mixture: In a blender, combine the 4 large eggs, 1/2 cup fat free cottage cheese, 1 tablespoon heavy cream, and salt and pepper to taste. Blend for about 30 seconds until smooth and creamy. The cottage cheese adds protein and a silky texture to the mixture.
  3. Fill Molds: Pour the blended egg mixture into the prepared egg bite molds, filling each about three-quarters full. Tap the molds gently on the counter to release any large air bubbles for even cooking.
  4. Set Up Instant Pot: Add 1 to 1.5 cups of water to the bottom of the Instant Pot inner pot. Place the Instant Pot handled trivet inside, then carefully stack and lower the filled egg bite molds onto the trivet.
  5. Cook Egg Bites: Seal the Instant Pot lid and set the device to steam for 11 minutes or use high pressure cooking for 9 minutes followed by a 10-minute natural pressure release. The natural release is essential to keep the egg bites fluffy and prevent them from collapsing.
  6. Serve: Once the pressure has fully released, vent any remaining pressure, open the pot, and carefully remove the molds. Flip the egg bites out onto a plate and serve warm.
