Steak and Vegetables
- 1 pound Ribeye Steak, sliced thinly against the grain (alternatively flank or sirloin steak)
- 1 Yellow Onion, sliced (can substitute with white onion for a sharper taste)
- 2 cups Bell Peppers, sliced (any variety of bell peppers can be used)
- 2 tablespoons Olive Oil
- Salt & Pepper, to taste
Base and Cheese
- 4 cups French Fries (homemade or store-bought)
- 8 ounces Provolone Cheese (or mozzarella, pepper jack for different flavors)
- 1 cup Cheese Sauce (optional for lighter version)
- 2 tablespoons Fresh Parsley, chopped (optional garnish)
Instructions
- Prepare the Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and bell peppers, season with salt and pepper, and sauté until they soften and caramelize slightly, about 8-10 minutes. Remove from skillet and set aside.
- Cook the Steak: In the same skillet, add remaining tablespoon of olive oil and increase heat to medium-high. Add the thinly sliced ribeye steak, seasoning with salt and pepper. Cook quickly, stirring, until browned and just cooked through, about 3-5 minutes. Combine with the cooked onions and peppers, stirring to mix well.
- Prepare the Fries: Cook the French fries according to package instructions or fry/bake homemade fries until crispy and golden.
- Assemble the Fries: Spread the cooked fries on a large oven-safe platter or baking sheet. Layer the steak and pepper mixture evenly over the fries.
- Add Cheese: Top the steak and vegetables with slices of provolone cheese or sprinkle with shredded cheese. Optionally, drizzle cheese sauce evenly over the top for added richness.
- Melt the Cheese: Place the assembled fries under a broiler or in a preheated oven at 375°F (190°C) for 3-5 minutes until the cheese melts and becomes bubbly.
- Garnish and Serve: Remove from oven, sprinkle chopped fresh parsley on top for a fresh finish, and serve immediately while hot and gooey.
