Biscuit Base:
- 1 cup plain flour
- 1/2 cup self-raising flour
- 1/2 cup desiccated coconut
- 1/2 cup brown sugar (firmly packed)
- 150g unsalted butter (melted)
Filling and Topping:
- 1/2 cup strawberry jam
- 1 1/2 cups icing sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1/2 cup pink marshmallows (chopped)
- 1/4 cup desiccated coconut (extra, for topping)
Instructions
- Biscuit Base: Preheat the oven to 180°C (350°F) and line a 20cm square slice tin with baking paper. In a mixing bowl, combine the plain flour, self-raising flour, desiccated coconut, and brown sugar. Add the melted butter and stir until well combined. Press the mixture firmly into the base of the prepared tin and bake for 15–18 minutes or until golden. Remove from the oven and allow to cool completely.
- Filling: Spread the strawberry jam evenly over the cooled base.
- Icing: In a separate bowl, combine the icing sugar, milk, and vanilla extract to form a thick but spreadable icing. Gently fold in the chopped marshmallows. Spread the icing mixture over the jam layer and smooth the top. Sprinkle with the extra desiccated coconut.
- Refrigerate for at least 1 hour or until set before slicing into bars.
Notes
- For a firmer icing, reduce the amount of milk slightly.
- You can also use raspberry jam for a twist on the classic flavor.
- Store in the refrigerator in an airtight container for up to 5 days.
