Description

Hobo Dinner Foil Packets are a comforting, all-in-one meal featuring seasoned ground beef patties nestled on a bed of sliced potatoes, carrots, mushrooms, and onions. Wrapped and cooked in foil, this dish can be grilled over coals or baked in the oven, making it perfect for camping or an easy weeknight dinner with minimal cleanup.

Ingredients

Scale

Meat

  • 2 pounds ground beef
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or more to taste)
  • 1/8 teaspoon ground black pepper (or more to taste)

Vegetables

  • 1 1/2 pounds potatoes, sliced
  • 4 large carrots, peeled and thinly sliced
  • 1 cup sliced mushrooms
  • 1 onion, thinly sliced

Seasonings & Oil

  • Olive oil, to taste
  • Salt and black pepper, to taste
  • Dried parsley, to taste
  • Garlic powder, to taste

Instructions

  1. Prepare the Beef Patties: In a large bowl, combine the ground beef with Worcestershire sauce, dried parsley, garlic powder, salt, and black pepper. Mix thoroughly to evenly distribute the seasonings. Then, shape the mixture into 6 evenly sized patties.
  2. Prepare Vegetables on Foil: Lay out 6 large pieces of heavy-duty aluminum foil and lightly coat each piece with olive oil. Evenly divide the sliced potatoes and carrots onto each foil piece. Season these vegetables with salt, black pepper, dried parsley, and garlic powder according to your taste.
  3. Assemble the Foil Packets: Place one hamburger patty on top of the vegetables on each foil sheet. Then scatter sliced onions and mushrooms over the patties. Season again with salt, black pepper, dried parsley, and garlic powder. Generously drizzle olive oil over everything for added moisture and flavor. Seal each foil packet securely to prevent steam from escaping during cooking.
  4. Cook the Packets: Grill the foil packets over medium heat for 15 to 20 minutes per side, allowing the beef to cook through and the vegetables to soften. Alternatively, they can be cooked on hot campfire coals using the same timing. If preferred, place the sealed packets on a baking sheet and bake at 375°F (190°C) for 45 to 60 minutes or until the beef patties are fully cooked and vegetables are tender.

Notes

  • Use heavy-duty aluminum foil to prevent tearing during grilling or baking.
  • You can swap ground beef for ground turkey or chicken for a leaner option.
  • Adjust seasoning amounts according to personal taste preference.
  • Ensure foil packets are sealed tightly to keep moisture in and avoid flare-ups on the grill.
  • If baking, place packets on a baking sheet to catch any drips.
  • Cooking times may vary depending on grill heat or oven variations; check for doneness.
