Description

Hobo Casserole Ground Beef is a comforting and hearty one-dish meal featuring layers of seasoned sliced potatoes, savory ground beef with onions, and a creamy mushroom soup mixture topped with melted cheddar cheese. Baked to perfection, this classic casserole is perfect for a family dinner or easy meal prep.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 4 medium potatoes, peeled and thinly sliced

Condiments and Dairy

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded cheddar cheese

Other

  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley, optional for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Beef and Onions: In a large skillet, heat olive oil over medium-high heat. Add ground beef and chopped onions, cooking until beef is browned and onions are softened, about 5-7 minutes. Drain excess fat.
  3. Prepare Soup Mixture: In a mixing bowl, combine cream of mushroom soup, milk, and Worcestershire sauce. Stir until blended well.
  4. Layer Potatoes: Evenly layer the thinly sliced potatoes in a greased 9×13-inch baking dish. Season with salt and pepper.
  5. Add Beef Layer: Spread the cooked ground beef and onion mixture evenly over the potato layer.
  6. Pour Soup Mixture: Pour the cream of mushroom soup mixture evenly over the beef and potatoes.
  7. Add Cheese: Sprinkle shredded cheddar cheese evenly on top of the casserole.
  8. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  9. Bake Uncovered: Remove the foil and bake uncovered for an additional 15 minutes until potatoes are tender and cheese is melted and bubbly.
  10. Cool and Garnish: Remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley if desired before serving.

Notes

  • For best results, slice potatoes thinly to ensure they cook evenly and thoroughly during baking.
  • You can substitute cream of mushroom soup with cream of celery or cream of chicken if preferred.
  • Adding Worcestershire sauce enhances the savory depth of the beef mixture but can be omitted for a milder flavor.
  • The casserole can be prepared in advance and refrigerated before baking; add a few extra minutes to baking time if starting from cold.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
