Ingredients
Scale
Main Ingredients
- 3 cups puffed rice
- 1/2 cup peanut butter (or other nut butter)
- 1/3 cup maple syrup
- 1/3 cup dark chocolate chips
Instructions
- Prepare the Pan: Line an 8×8 inch pan with parchment paper to prevent sticking and allow for easy removal of the treats once set.
- Add Puffed Rice: Place the 3 cups of puffed rice into a large mixing bowl, ensuring enough space to mix thoroughly.
- Heat Nut Butter and Syrup: In a microwave-safe bowl, heat the peanut butter and maple syrup together for 30 seconds to one minute until warm and easily blendable.
- Mix Ingredients: Stir the warmed peanut butter and maple syrup mixture into the puffed rice until all the puffed rice is evenly coated.
- Press into Pan: Transfer the mixture into the parchment-lined pan, pressing down firmly and evenly to create a compact layer.
- Set in Freezer: Place the pan in the freezer for 40 minutes to allow the mixture to firm up properly.
- Melt and Drizzle Chocolate: Melt the dark chocolate chips in the microwave, stirring every 20 seconds until smooth. Drizzle the melted chocolate evenly over the set bars.
- Final Chill: Return the pan to the freezer or refrigerator to allow the chocolate to harden, approximately 15-20 minutes, before slicing into 9 bars.
Notes
- You can substitute peanut butter with almond butter or any nut/seed butter of your choice.
- Use gluten-free puffed rice to make the recipe gluten-free if needed.
- Press the mixture firmly to ensure the bars hold together well.
- If preferred, you can skip the chocolate drizzle or use a different topping like chopped nuts or seeds.
- Store bars in an airtight container in the fridge for up to one week.
