Chicken Mixture:

  • 2 cups cooked shredded chicken breast
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1/2 cup salsa
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt

Additional Ingredients:

  • 6 small corn tortillas, cut into quarters
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sauté vegetables: Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell pepper until softened. Add garlic and cook briefly.
  3. Combine ingredients: Add shredded chicken, black beans, corn, diced tomatoes with chilies, salsa, taco seasoning, cumin, and salt. Simmer for 5 minutes.
  4. Layer casserole: In a 9×13-inch baking dish, layer half of the tortilla pieces, chicken mixture, and cheese. Repeat the layers.
  5. Bake: Bake uncovered for 20–25 minutes until heated through and cheese is melted.
  6. Garnish and serve: Garnish with chopped cilantro before serving, if desired.
