Description

  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 large carrots, sliced
  • 3 stalks celery, sliced
  • 1 large potato, diced

Liquids & Seasonings

  • 2 tablespoons olive oil
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. Sauté Onions: Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until translucent, releasing their natural sweetness.
  2. Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, taking care not to burn it.
  3. Cook Vegetables: Add the chopped cabbage, sliced carrots, celery, and diced potato to the pot. Cook for 5-7 minutes, stirring occasionally, allowing the vegetables to soften slightly.
  4. Add Broth and Seasonings: Pour in the vegetable broth, then stir in dried thyme, smoked paprika, bay leaf, salt, and pepper. Mix everything thoroughly to combine the flavors.
  5. Simmer Soup: Bring the mixture to a boil, then reduce the heat to low. Let it simmer gently for 25-30 minutes until all the vegetables are tender and the flavors meld together.
  6. Finish and Serve: Remove the bay leaf from the pot. Taste and adjust the seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.
