For the Stuffed Peppers
- 1 pound ground turkey
- 1 bag microwave brown rice (1 ½ cups cooked)
- 4 bell peppers (orange, red or green)
- 2 16 oz. cans tomato sauce
- 1 tablespoon Worcestershire sauce
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat Oven: Set your oven to 350 degrees F (175 degrees C) to prepare for baking the stuffed peppers.
- Brown the Turkey: In a skillet over medium heat, cook the ground turkey until browned and cooked through. Drain excess fat to keep the filling lean.
- Prepare Peppers: Cut the tops off the bell peppers and remove seeds and membranes. Carefully carve spooky pumpkin faces onto the peppers using a sharp knife. Keep the tops and scraps for garnish or other uses.
- Arrange Peppers: Place the hollowed peppers upright in a baking dish, ready for stuffing.
- Mix Filling: In a large bowl, combine the browned turkey, cooked brown rice, 1 ½ cans of tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix thoroughly to blend flavors.
- Stuff Peppers: Spoon the turkey and rice mixture evenly into each prepared bell pepper, filling them generously.
- Add Sauce and Cheese: Mix the remaining ½ can of tomato sauce with Italian seasoning, then pour this mixture over and around the stuffed peppers. Sprinkle shredded mozzarella cheese on top of each pepper.
- Bake: Place the baking dish in the preheated oven and bake for 45 minutes, or until the peppers are tender and the cheese is melted and golden.
