For the Stuffed Peppers

  • 1 pound ground turkey
  • 1 bag microwave brown rice (1 ½ cups cooked)
  • 4 bell peppers (orange, red or green)
  • 2 16 oz. cans tomato sauce
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup mozzarella cheese, shredded


Instructions

  1. Preheat Oven: Set your oven to 350 degrees F (175 degrees C) to prepare for baking the stuffed peppers.
  2. Brown the Turkey: In a skillet over medium heat, cook the ground turkey until browned and cooked through. Drain excess fat to keep the filling lean.
  3. Prepare Peppers: Cut the tops off the bell peppers and remove seeds and membranes. Carefully carve spooky pumpkin faces onto the peppers using a sharp knife. Keep the tops and scraps for garnish or other uses.
  4. Arrange Peppers: Place the hollowed peppers upright in a baking dish, ready for stuffing.
  5. Mix Filling: In a large bowl, combine the browned turkey, cooked brown rice, 1 ½ cans of tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix thoroughly to blend flavors.
  6. Stuff Peppers: Spoon the turkey and rice mixture evenly into each prepared bell pepper, filling them generously.
  7. Add Sauce and Cheese: Mix the remaining ½ can of tomato sauce with Italian seasoning, then pour this mixture over and around the stuffed peppers. Sprinkle shredded mozzarella cheese on top of each pepper.
