Description

This Ground Turkey Enchilada Skillet is a delicious one-pan meal that’s easy to make and full of flavor. With tender ground turkey, beans, corn, and a blend of spices, all topped with melted cheese, cilantro, and avocado, this dish is a satisfying dinner option.

Ground Turkey Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (10-ounce) can red enchilada sauce
  • 1/2 cup low-sodium chicken broth
  • 6 small corn tortillas, cut into strips
  • 1 cup shredded Mexican cheese blend
  • Chopped fresh cilantro and diced avocado for topping (optional)


Instructions

  1. Heat the olive oil: In a large skillet over medium heat, add olive oil.
  2. Cook the turkey: Add ground turkey and cook until browned, breaking it up with a spoon for about 5 to 6 minutes.
  3. Add vegetables and spices: Add onion, bell pepper, garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Cook until vegetables are softened.
  4. Combine ingredients: Stir in black beans, corn, enchilada sauce, and chicken broth. Mix well.
  5. Add tortillas and cheese: Fold in tortilla strips, bring to a simmer. Sprinkle cheese on top, cover, and cook until melted.
  6. Finish and serve: Top with cilantro and avocado. Serve hot.

Notes

  • You can use ground chicken or beef instead of turkey.
