For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup hot honey (store-bought or homemade with honey and chili flakes)

For the Sweet Corn Salad:

  • 4 ears of corn (shucked)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • ¼ cup red onion (finely chopped)
  • ¼ cup fresh cilantro (chopped)
  • juice of 1 lime
  • salt and pepper to taste

Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat.
  2. Prepare the Chicken: Mix olive oil, smoked paprika, garlic powder, salt, and black pepper. Rub the mixture over the chicken breasts and grill for 5–7 minutes per side.
  3. Glaze with Hot Honey: Brush each chicken breast with hot honey during the last 2 minutes of grilling.
  4. Grill the Corn: Grill the corn for 8–10 minutes until lightly charred. Cut the kernels off the cobs.
  5. Make the Salad: In a bowl, combine grilled corn, cherry tomatoes, avocado, red onion, cilantro, lime juice, salt, and pepper. Toss gently.
  6. Serve: Serve the hot honey chicken over the sweet corn salad. Drizzle with extra hot honey if desired.

Notes

  • You can make your own hot honey by warming honey with chili flakes. For extra heat, add cayenne to the chicken rub.
  • The salad can be prepared ahead and chilled.
