Description

These Green Tea, Lemon & Ginger Gummies are a refreshing and healthy homemade treat, combining the antioxidant benefits of green tea with the zesty brightness of lemon and the spicy warmth of fresh ginger. Naturally sweetened with honey or maple syrup, these vegan-friendly gummies make a perfect snack or wellness booster, easily crafted in just under 20 minutes plus chilling time.

Ingredients

Scale

Main Ingredients

  • 1 cup brewed green tea, cooled
  • 1/4 cup fresh lemon juice
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons unflavored Vegan Gelatin (or agar-agar for vegan option)
  • 1/4 cup hot water

Instructions

  1. Brew Green Tea: Brew one cup of green tea and let it cool completely to room temperature to prevent melting the gelatin later.
  2. Mix Liquid Ingredients: In a bowl, combine the cooled green tea with fresh lemon juice and your chosen sweetener, then stir in the freshly grated ginger thoroughly for full flavor integration.
  3. Dissolve Gelatin: Place a saucepan over low heat and whisk the gelatin powder into the hot water until fully dissolved and smooth, ensuring there are no lumps.
  4. Combine Mixtures: Pour the dissolved gelatin mixture into the green tea mixture and whisk vigorously until all ingredients are blended uniformly.
  5. Fill Molds and Chill: Transfer the mixture into gummy molds and place them in the refrigerator. Allow to chill and set for 2-3 hours until firm.
  6. Demold and Serve: Once fully set, gently pop the gummies out of the molds and enjoy your refreshing, healthy treats.

Notes

  • Use maple syrup instead of honey to make the gummies vegan-friendly.
  • If using agar-agar, note that it sets at room temperature, but chilling will firm up the gummies nicely.
  • Be sure to let the brewed green tea cool before mixing with gelatin to prevent it from losing its gelling properties.
  • Store gummies in an airtight container in the refrigerator for up to one week.
