Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Mix Wet Ingredients: In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in the lime juice and zest.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Add green food coloring if desired and mix until evenly colored.
  5. Bake: Pour the batter into the prepared pan and bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.

Notes

  • For an extra lime kick, drizzle the cooled cake with a simple lime glaze made from powdered sugar and lime juice.
