Description

This Garlic Kielbasa Grilled Foil Packets recipe offers a delicious and easy-to-make meal combining savory garlic kielbasa, tender potatoes, sweet peppers, and corn on the cob, all seasoned with Italian herbs and grilled to perfection in foil packets. Perfect for a convenient outdoor cookout or a quick, flavorful weeknight dinner.

Ingredients

Scale

Kielbasa and Vegetables

  • 1 package garlic kielbasa (fully cooked)
  • 2 potatoes, washed well
  • 2 small sweet peppers (red, orange, or yellow)
  • 2 ears corn on the cob, husked

Seasoning and Oil

  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the Grill: Preheat your grill to 350°F (medium heat) to prepare for cooking the foil packets evenly.
  2. Slice Kielbasa: Cut the fully cooked garlic kielbasa into 1-inch thick medallions to ensure uniform cooking.
  3. Chop Potatoes: Dice the washed potatoes into 1/2-inch pieces for quicker and even cooking inside the packets.
  4. Dice Peppers: Chop the sweet peppers into small bite-sized pieces to mix well with other ingredients.
  5. Mix Ingredients and Season: In a large bowl, combine the kielbasa slices, chopped potatoes, and diced peppers. In a separate small bowl, whisk together olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper, then pour this mixture over the kielbasa and vegetables. Toss everything to coat thoroughly.
  6. Assemble Foil Packets: Cut four large rectangles of heavy-duty foil. Evenly divide the kielbasa mixture onto the center of each foil piece. Add 2 pieces of corn on the cob to each foil piece. Fold the foil over the ingredients and securely roll and crimp the edges to seal the packets closed to trap steam.
  7. Grill Packets: Place packets on the grill over medium heat. Grill for 12 minutes on one side, then carefully flip and grill for another 12 minutes. Check one packet by opening it carefully to test if potatoes are tender. If not fully cooked, re-seal and continue grilling, checking frequently until potatoes are soft.
  8. Cool and Serve: Remove packets from the grill and let them cool for 5 minutes. Carefully open each packet to serve the hot, flavorful kielbasa and vegetables directly from the foil.

Notes

  • Ensure the foil packets are sealed tightly to trap steam and cook the ingredients evenly.
  • You can customize the seasoning based on personal preferences by adding smoked paprika or chili flakes for extra heat.
  • Use medium-sized potatoes for even cooking; smaller potatoes will cook faster.
  • Be cautious when opening foil packets after grilling as hot steam will escape.
  • Leftovers can be refrigerated and reheated in a skillet or microwave but are best enjoyed fresh off the grill.
