For the Steak Bites:
- 1 ½ pounds sirloin steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley
For the Mashed Potatoes:
- 2 pounds russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- ½ cup heavy cream (more as needed)
- ¼ cup sour cream
- Salt and pepper, to taste
Instructions
- Mashed Potatoes: Bring a large pot of salted water to a boil. Add cubed potatoes and cook until fork-tender, about 15 minutes. Drain and return to the pot. Add butter, heavy cream, sour cream, salt, and pepper. Mash until smooth and creamy, adding more cream if needed. Keep warm.
- Steak Bites: Pat steak bites dry, season with salt and pepper. Sear in olive oil over medium-high heat until browned, about 1-2 minutes per side. Remove to a plate. Add butter to the skillet, sauté garlic, then return steak bites. Toss in garlic butter, parsley, and remaining butter. Serve over mashed potatoes.
