For the Steak Bites:

  • 1 ½ pounds sirloin steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley

For the Mashed Potatoes:

  • 2 pounds russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • ½ cup heavy cream (more as needed)
  • ¼ cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Mashed Potatoes: Bring a large pot of salted water to a boil. Add cubed potatoes and cook until fork-tender, about 15 minutes. Drain and return to the pot. Add butter, heavy cream, sour cream, salt, and pepper. Mash until smooth and creamy, adding more cream if needed. Keep warm.
  2. Steak Bites: Pat steak bites dry, season with salt and pepper. Sear in olive oil over medium-high heat until browned, about 1-2 minutes per side. Remove to a plate. Add butter to the skillet, sauté garlic, then return steak bites. Toss in garlic butter, parsley, and remaining butter. Serve over mashed potatoes.
