Instructions

  1. Prepare the oven and pan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it. Optionally, sprinkle a little flour or cornmeal on the tray to prevent sticking and add texture.
  2. Prep the English muffins: Split the English muffins in half using a fork to preserve their nooks and crannies or a serrated knife for cleaner cuts. Arrange the 8 halves cut side up on the prepared baking sheet and lightly brush or spray the cut sides with olive oil to encourage crispness.
  3. Pre-toast the muffin bases: Place the tray in the preheated oven and bake for 5–7 minutes until edges begin to crisp but are not browned. This step prevents sogginess once toppings are added. Remove from oven and keep oven on.
  4. Cook the bacon or sausage: If not already cooked, cook bacon in a skillet over medium heat until crisp, then drain on paper towels and crumble when cool. For sausage, cook in skillet breaking into crumbles until browned with no pink remains, drain excess fat. Reserve 4 slices worth of bacon or 1/2 cup sausage.
  5. Make the scrambled eggs: In a bowl, whisk 6 eggs, 3 tablespoons milk or half-and-half, 1/4 teaspoon salt, and black pepper until frothy. Heat a nonstick skillet over medium heat and melt butter. Pour in egg mixture, let sit 10–15 seconds, then gently push eggs from edges to center forming soft curds. Stir occasionally until just set and soft, then remove from heat and adjust salt if needed.
  6. Season and prepare the sauce: In a small bowl, combine pizza or marinara sauce with garlic powder, oregano, and optional basil. Taste and add salt if needed.
  7. Assemble the pizzas: Spoon about 1 to 1½ tablespoons of seasoned sauce on each toasted English muffin half, spreading evenly. Evenly divide scrambled eggs on top of sauce, then sprinkle crumbled bacon or sausage over eggs.
  8. Add cheese and vegetables: Combine shredded mozzarella and cheddar cheeses, then sprinkle the mixture evenly over each muffin half covering eggs and meat. Add Parmesan cheese on top, followed by diced bell pepper and red onion (if using). Scatter sliced green onions over everything.
