Ingredients

Scale

Lemon-Garlic Sauce

  • ¼ cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, chopped
  • 1 tablespoon freshly chopped parsley, plus more for garnish

Salmon Patties

  • 16 ounces cooked salmon or 1 (14.75-ounce) can canned salmon, flaked
  • 2 large eggs, lightly beaten
  • ½ cup chopped onion
  • â…” cup fine almond flour
  • ¼ cup chopped fresh parsley
  • 2 cloves garlic, chopped
  • 2 tablespoons fresh lemon juice
  • â…› teaspoon sea salt, or to taste
  • â…› teaspoon freshly cracked black pepper, or to taste
  • Neutral oil (approximately 2-4 tablespoons, as needed)

Optional Serving Suggestions

  • Chopped fresh parsley
  • Lemon wedges

Instructions

  1. Make the Lemon-Garlic Sauce: In a small bowl, combine mayonnaise, Greek yogurt, lemon juice, garlic, and parsley. Stir until smooth, cover, and refrigerate until ready to serve.
  2. Prepare the Salmon Mixture: In a medium mixing bowl, flake the cooked or canned salmon with a fork.
  3. Add Ingredients: Add eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper to the salmon. Mix until well combined.
  4. Form the Patties: Scoop out 2-ounce portions of the salmon mixture using a cookie scoop or disher. Roll each portion into a ball, then gently flatten into a patty shape.
  5. Heat the Skillet: Preheat a large skillet over medium heat and add 1 tablespoon of neutral oil.
  6. Cook the Patties: Cook the patties in batches, without overcrowding the skillet. Fry each side for 5-6 minutes until the patties are golden brown and cooked through.
  7. Drain Excess Oil: Transfer cooked patties to a paper towel-lined plate to absorb excess oil. Repeat the frying process with remaining patties, adding more oil if needed.
  8. Serve: Place the salmon patties on serving plates, drizzle with the lemon-garlic sauce, and garnish with additional chopped parsley and lemon wedges. Serve immediately.

Notes

  • Use fresh or canned salmon according to availability; canned salmon should be well drained before mixing.
  • Almond flour helps bind the patties and keeps them gluten-free; you can substitute with breadcrumbs if preferred but will change the texture.
  • If patties are falling apart, add a little more almond flour or an extra egg to them mixture.
  • Ensure the skillet is hot before adding patties to achieve a crisp crust.
  • Serve with a fresh salad or steamed vegetables for a complete meal.
