Ingredients
Scale
Vegetables
- 1 medium cabbage (about 2 pounds)
- 3 medium carrots
- 1/2 cup fresh parsley
Dressing
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- Celery seeds, to taste
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the cabbage: Quarter the medium cabbage and remove the core. Finely shred the cabbage pieces and place them into a large mixing bowl to create the base of your coleslaw.
- Add carrots and parsley: Shred the three medium carrots and chop the fresh parsley. Add both to the bowl with the cabbage and gently toss to mix the vegetables evenly.
- Make the dressing: In a separate bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 2 tablespoons of Dijon mustard, celery seeds, salt, and pepper. Stir well until the dressing is smooth and well blended.
- Toss the salad: Pour about two-thirds of the prepared dressing over the cabbage mixture. Toss thoroughly to coat the vegetables evenly. Add more dressing as needed to achieve your preferred creaminess.
- Serve or chill: You can serve the coleslaw immediately for a fresh crunch, or refrigerate for about an hour to allow the flavors to meld and develop more depth before serving.
Notes
- For a lighter version, you can substitute mayonnaise with Greek yogurt.
- Adjust celery seed quantity based on your preference as it adds a distinct flavor.
- Coleslaw tastes best if refrigerated for at least one hour before serving, but can be eaten right away for a crunchier texture.
- Feel free to add a touch of honey or sugar if you prefer a slightly sweeter coleslaw.
- Ensure to shred the vegetables finely for the best texture and flavor distribution.
