Description

This Easy Creamy Coleslaw is a classic, refreshing side dish perfect for any meal. Featuring crisp shredded cabbage and carrots tossed with a flavorful homemade dressing of mayonnaise, apple cider vinegar, Dijon mustard, and celery seeds, this recipe offers a creamy texture with just the right tang. Perfect for barbecues, picnics, or a simple weeknight dinner, it’s quick to prepare and serves approximately six people.

Ingredients

Scale

Vegetables

  • 1 medium cabbage (about 2 pounds)
  • 3 medium carrots
  • 1/2 cup fresh parsley

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • Celery seeds, to taste
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the cabbage: Quarter the medium cabbage and remove the core. Finely shred the cabbage pieces and place them into a large mixing bowl to create the base of your coleslaw.
  2. Add carrots and parsley: Shred the three medium carrots and chop the fresh parsley. Add both to the bowl with the cabbage and gently toss to mix the vegetables evenly.
  3. Make the dressing: In a separate bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 2 tablespoons of Dijon mustard, celery seeds, salt, and pepper. Stir well until the dressing is smooth and well blended.
  4. Toss the salad: Pour about two-thirds of the prepared dressing over the cabbage mixture. Toss thoroughly to coat the vegetables evenly. Add more dressing as needed to achieve your preferred creaminess.
  5. Serve or chill: You can serve the coleslaw immediately for a fresh crunch, or refrigerate for about an hour to allow the flavors to meld and develop more depth before serving.

Notes

  • For a lighter version, you can substitute mayonnaise with Greek yogurt.
  • Adjust celery seed quantity based on your preference as it adds a distinct flavor.
  • Coleslaw tastes best if refrigerated for at least one hour before serving, but can be eaten right away for a crunchier texture.
  • Feel free to add a touch of honey or sugar if you prefer a slightly sweeter coleslaw.
  • Ensure to shred the vegetables finely for the best texture and flavor distribution.
