Description

This Easy Chicken Lo Mein is a quick and flavorful stir-fried noodle dish featuring tender chicken breast, sautéed vegetables, and a savory soy-based sauce.   • 2 teaspoons cornstarch
  • 1/2 cup chicken broth (plus more as needed)
  • 2 tablespoons oil (sesame oil works best)

  • 8 oz spaghetti (cooked according to package directions; spaghettini, linguine, or ramen noodles can also be used)


Instructions

  1. Cook vegetables: Heat 1 tablespoon of oil in a large skillet over medium heat. Sauté the sliced mushrooms for 2 minutes, then add the sliced peppers and spring onions. Continue sautéing until the vegetables are softened. Remove them from the skillet and set aside on a plate.
  2. Cook chicken: Add the remaining tablespoon of oil to the skillet, increasing the heat to medium-high. Add the diced chicken breast and cook until browned, stirring occasionally. Push the cooked chicken to the sides of the skillet to create space in the center.
  3. Make sauce: Lower the heat to low. In a small bowl, whisk the cornstarch into the chicken broth to remove lumps, then pour this mixture into the center of the skillet along with the soy sauce. Stir continuously and let it simmer until the sauce just begins to thicken. If the sauce becomes too thick or gloopy, add a few more tablespoons of chicken broth to loosen it.
  4. Finish: Add the cooked spaghetti and the sautéed vegetables back into the skillet. Toss everything well to combine and ensure the noodles and vegetables are evenly coated with the sauce. Heat through for a few minutes, then serve immediately.
