Description

This Easy Blackberry Cobbler is a delightful and simple dessert combining fresh or frozen blackberries with a crunchy oat and almond topping. Baked to golden perfection and served warm with vanilla ice cream, it’s the perfect comforting treat for any occasion.

Ingredients

Scale

For the Blackberry Filling

  • 4-5 cups blackberries (fresh or frozen)
  • 3/4 cup white sugar
  • 2 tablespoons cornstarch

For the Topping

  • 1 cup quick oats
  • 1/2 cup Blue Diamond Lightly Salted Almonds (chopped fine)
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup butter (melted)

To Serve

  • Vanilla ice cream

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 375°F. Grease the sides of a square baking pan, size 8×8 or 9×9 inches, to prevent sticking during baking.
  2. Prepare Berries: If using frozen blackberries, drain them until about half thawed to reduce excess moisture. Reserve the juice; it can be consumed separately.
  3. Mix Filling: In a medium bowl, combine the blackberries with white sugar and cornstarch, stirring gently to coat the berries evenly. Transfer this mixture into the prepared baking pan.
  4. Prepare Topping Mixture: In another medium bowl, mix quick oats, finely chopped almonds, brown sugar, and cinnamon.
  5. Add Butter to Topping: Melt the butter in a small bowl, then pour it over the oat mixture. Stir together until the dry ingredients are evenly coated.
  6. Assemble Cobbler: Spread the oat and almond topping evenly over the blackberry filling in the baking pan.
  7. Bake: Place the pan in the oven and bake for 25-30 minutes until the topping is lightly browned and crisp.
  8. Serve: Remove from the oven and serve warm topped generously with vanilla ice cream for the best experience.

Notes

  • Using frozen blackberries requires draining to avoid a soggy cobbler; fresh berries will work without draining.
  • The reserved blackberry juice is flavorful and can be enjoyed as a drink or added to smoothies.
  • The vanilla ice cream is highly recommended as it complements the warm cobbler perfectly.
  • For a nut-free version, omit the almonds and increase oats slightly.
  • Store leftovers covered in the refrigerator and reheat gently before serving.
