Ingredients
Scale
Dry Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
Wet Ingredients:
- 3 large eggs
- 1 1/2 cups whole milk
- 2 tablespoons melted butter (plus more for the pan)
- 1 teaspoon vanilla extract
Instructions
- Prepare the Batter: In a large mixing bowl, whisk together the flour, cocoa powder, sugar, and salt. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla until combined.
- Mix the Ingredients: Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and no lumps remain.
- Rest the Batter: Let the batter rest for at least 15 minutes (or up to 1 hour) to allow the flour to fully hydrate.
- Cook the Crepes: Heat a nonstick skillet or crepe pan over medium heat and lightly butter the surface. Pour about 1/4 cup of batter into the pan and swirl it to evenly coat the bottom. Cook for 1 to 2 minutes until the edges start to lift and the bottom is set, then flip and cook for another 30 seconds.
- Serve: Repeat with the remaining batter, adding more butter as needed. Serve warm with fillings like whipped cream, berries, Nutella, or powdered sugar.
Notes
- To make the crepes ahead of time, stack them with parchment paper between each and refrigerate for up to 2 days or freeze for up to 2 months. Reheat gently in a pan or microwave.
- For dairy-free crepes, substitute plant-based milk and vegan butter.
