Instructions

  1. Prepare the Batter: In a large mixing bowl, whisk together the flour, cocoa powder, sugar, and salt. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla until combined.
  2. Mix the Ingredients: Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and no lumps remain.
  3. Rest the Batter: Let the batter rest for at least 15 minutes (or up to 1 hour) to allow the flour to fully hydrate.
  4. Cook the Crepes: Heat a nonstick skillet or crepe pan over medium heat and lightly butter the surface. Pour about 1/4 cup of batter into the pan and swirl it to evenly coat the bottom. Cook for 1 to 2 minutes until the edges start to lift and the bottom is set, then flip and cook for another 30 seconds.
  5. Serve: Repeat with the remaining batter, adding more butter as needed. Serve warm with fillings like whipped cream, berries, Nutella, or powdered sugar.

Notes

  • To make the crepes ahead of time, stack them with parchment paper between each and refrigerate for up to 2 days or freeze for up to 2 months. Reheat gently in a pan or microwave.
