Description

Dressed Eggs are a simple and elegant appetizer featuring hard-boiled eggs filled with a creamy, flavorful yolk mixture made with mayonnaise, Dijon mustard, and seasonings. Finished with a sprinkle of paprika, fresh chives, and a drizzle of olive oil, these eggs are perfect for parties or a quick snack served chilled.

Ingredients

Scale

Main Ingredients

  • 8 eggs (hard boiled and peeled)
  • 1/4 cup mayonnaise
  • 1/2 to 1 tsp Dijon mustard (such as Grey Poupon) or 1 tsp white wine vinegar
  • Sprinkle of garlic powder
  • Salt and pepper to taste
  • 2 tbsp chives (finely chopped)
  • Paprika (for sprinkling)
  • Olive oil (for drizzling)

Instructions

  1. Prepare the Eggs: Peel all the hard-boiled eggs carefully. Cut each egg in half lengthwise and gently remove the yolks, placing them into a medium mixing bowl.
  2. Mash the Yolks: Using a fork, mash the egg yolks thoroughly until they are crumbly and smooth, ensuring no large lumps remain.
  3. Mix the Filling: Add 1/4 cup of mayonnaise, 1 tsp of Dijon mustard (or white wine vinegar if preferred), a sprinkle of garlic powder, and salt and pepper to taste. Mix well until the filling is creamy and well combined.
  4. Fill the Egg Whites: Spoon the yolk mixture back into the hollowed egg white halves. For a neater presentation, use a pastry bag to pipe the filling into the egg whites.
  5. Garnish and Serve: Sprinkle the filled eggs with paprika, scatter the chopped chives on top, and finish with a light drizzle of good-quality olive oil. Chill the dressed eggs before serving for best flavor.

Notes

  • Adjust the amount of Dijon mustard or white wine vinegar depending on your taste preference for tanginess.
  • Use a piping bag for professional-looking presented eggs, or simply use a spoon if preferred.
  • For a spicy twist, add a dash of cayenne pepper or hot sauce to the filling.
  • These dressed eggs are best served chilled and can be prepared a few hours ahead of time and refrigerated.
  • To ensure firm yolks, use eggs that have been boiled for about 10-12 minutes.
