Instructions

  1. Prepare the Fig Filling: Chop the dried figs into small pieces and place them in a small saucepan with 1 cup of water. Bring to a simmer over medium heat and cook until the figs have softened, about 10-15 minutes. Add 1-2 tablespoons of sugar if desired for extra sweetness and 1 teaspoon of fresh lemon juice to brighten the flavor. Stir well, then remove from heat and let cool.
  2. Make the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup brown sugar, and 1/8 teaspoon salt. Cut in the cold, unsalted butter pieces using a pastry cutter or fingers until the mixture resembles coarse crumbs. Press two-thirds of this mixture firmly into the bottom of a 9×9-inch baking pan to form the crust.
  3. Prepare the Cream Cheese Filling: In a separate bowl, beat 8 ounces of softened cream cheese until smooth. Add 1/4 cup sugar, 1 teaspoon vanilla extract, and 1 large egg. Mix until well combined and creamy.
