Description

These Cucumber Tuna Avocado Salad Rolls are a refreshing and healthy appetizer or snack. Fresh cucumber slices are filled with a flavorful mixture of tuna, creamy avocado, and zesty seasonings, then rolled up for a delightful presentation.

Tuna Avocado Mixture:

  • 1 ripe avocado, diced
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper to taste

Optional:

  • Microgreens or shredded lettuce for added crunch

Instructions

  1. Prepare Tuna Avocado Mixture: In a medium bowl, combine the tuna, diced avocado, mayonnaise, Dijon mustard, lemon juice, and chopped dill. Mix gently until combined, being careful not to mash the avocado too much. Season with salt and pepper to taste.
  2. Assemble Rolls: Lay cucumber slices flat on a clean surface. Place a small spoonful of the tuna avocado mixture at one end of each cucumber strip. Add a few microgreens or lettuce, if using. Carefully roll up each cucumber slice to form a pinwheel-style roll. Secure with a toothpick if needed. Repeat with remaining ingredients.
  3. Serve: Serve immediately or chill for 10–15 minutes before serving.
