Description

This comforting Crock Pot Lasagna Soup combines all the classic flavors of traditional lasagna in a hearty soup form. Ground beef, aromatic herbs, tender broken lasagna noodles, and creamy cheeses are slowly simmered together in a slow cooker, making it an easy and satisfying meal perfect for busy days.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids and Canned Goods

  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth

Herbs and Spices

  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Pasta and Cheese

  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Brown the Beef: In a large skillet, cook the ground beef over medium heat until browned, about 6-8 minutes. Drain excess fat to reduce grease in the soup.
  2. Combine Ingredients in Slow Cooker: Transfer the browned beef to a slow cooker. Add the chopped onion, minced garlic, crushed tomatoes, beef broth, dried basil, dried oregano, and red pepper flakes if using. Stir well to combine all ingredients.
  3. Slow Cook the Soup: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, allowing the flavors to meld and the soup to become rich and hearty.
  4. Add the Lasagna Noodles: About 30 minutes before serving, stir in the broken lasagna noodles. This ensures the pasta cooks properly without becoming mushy.
  5. Add Cheeses and Season: Just before serving, stir in the ricotta and shredded mozzarella cheese to add creaminess to the soup. Season with salt and pepper to taste, then serve hot.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • For a vegetarian option, omit the meat and use vegetable broth.
  • Adjust red pepper flakes according to your spice preference or omit for a milder taste.
  • Lasagna noodles can be replaced with broken spaghetti or any short pasta if desired.
  • Leftovers store well in the refrigerator for up to 3 days and reheat nicely.
