Ground Beef Filling:

- 1 pound ground beef
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup tomato sauce
- 1/4 cup water
Tacos:
- 8 small corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- sour cream and lime wedges for serving
- neutral oil for frying
Instructions
- Prepare Ground Beef Filling: Heat olive oil in a skillet over medium heat. Add onion, cook until softened, then add garlic. Brown ground beef, season with spices, add tomato sauce and water, simmer until thickened.
- Fry Tortillas: Heat oil in a skillet. Fill each tortilla with beef mixture and cheese, fold in half. Fry until crispy, then drain on paper towels.
- Assemble Tacos: Fill crispy tortillas with lettuce, tomatoes, cilantro, and sour cream. Serve with lime wedges.
Notes
- You can substitute ground turkey or chicken for the beef.
- To make these tacos spicier, add hot sauce or diced jalapeños to the filling.
